RECIPE: SOUS VIDE RACK OF VENISON BY MATT PITTMAN

Maui Nui meets Anova meets MeatChurch BBQ! Described by our friend and favorite pitmaster, Matt Pittman, the venison rib rack "is one of the most prized cuts on the planet." Ensure medium-rare rib rack perfection with Mattʻs sous vide recipe!

INGREDIENTS:

STEP 1: First, set your Anova Sous Vide Precision Cooker to 130°F/54.5°C.

STEP 2: Season venison and seal rack in vacuum bag

STEP 3: Place in water bath and sous vide for 2 hours.

STEP 4: Get grill or cast iron pan blazing hot

STEP 5: Remove venison from bag and pat dry. Place onto chosen sear surface and sear for 1 minute a side.

STEP 6: Slice and serve this medium-rare magic!
