The time it takes for an idea to become an innovation. For an innovation to become a tradition. For that well-worn path to take us so far we begin to circle back—learning, again, what only time can teach us: quality, wisdom, balance.
Over a decade ago now, we began this work to help find a better balance for our communities. Every innovation—better harvesting, better processing, better food—has flowed from that commitment.
For us, years of harvesting wild animals has been a study in variability, a practice of patience. Weather, terrain, animal behavior—no two nights are ever the same. And through all our building of harvest and butcher systems, we continue to meet the same essential challenge: how do we contain this unpredictability just enough to give you the consistency you deserve, without losing what makes this food so special?
It turns out, our latest answer to that core question was sitting right there in one of the world’s oldest food technologies: time.
Over the coming weeks, we will introduce you to our ‘Ohana Reserve Aged Cuts—fresh cuts that have been naturally aged for better culinary reliability and consistency of flavor. Effortless to prepare. Even more remarkably delicious.
