Leg Medallions
If there’s one section of the animal that says versatility, it’s the leg. Multiple muscle groups, along with a bit of work means texture and flavor!
— HOW TO COOK
A fan favorite, these versatile cuts come from the rear leg and are naturally tender, making them perfect for pan-searing with just salt and pepper or your favorite spice blend. And looking to braise something? Leg muscles do just enough work to take a braise without drying out.
BEST FOR

When we say nutrient-dense, we mean it:
Protein - 21g (43% DV)
Protein is important for cellular growth and it provides our tissues with protective strength. It sparks our metabolism and energy production, helps regulate our body chemistry, and maintains our body’s PH.
Niacin (B3) - 41%
Niacin (B3 or nicotinic acid) is the most stable B vitamin and, as a part of two coenzymes, it is involved in more than 50 metabolic functions in the body. Niacin helps maintain cholesterol levels, provides energy to cells, stimulates circulation, and supports a healthy nervous system. Increased Niacin is needed for athletes, during pregnancy/lactation, and during periods of growth.
Vitamin B12 - 24%
Vitamin B12 (cobalamin) is the only vitamin to contain the essential mineral cobalt.
B12 is well known for its energy and cognitive functions, but is also needed in the formation of red blood cells, DNA, and synthesis of the myelin sheath that insulates your neurons. It plays a critical role in the growth and appetite of children.
Choline - 11%
Choline is an important new member of the B vitamins and was deemed the “memory vitamin”. It is nestled into the fat layers of the membranes of every cell in the body and is the only vitamin that crosses the blood/brain barrier to be involved in brain chemical metabolism. Choline also serves in fat utilization in the body and detoxification.
Selenium - 185%
Selenium is an incredibly important trace mineral with numerous health benefits. It functions as a component of glutathione peroxidase, an enzyme responsible for the antioxidant properties of glutathione. Selenium supports cardiovascular health, heavy metal toxin protection, thyroid function, cognitive health, as well as growth, development, and fertility.
Chromium - 83%
Chromium is an essential part of the glucose tolerance factor (GTF) and is vital in regulating carbohydrate metabolism. It can enhance insulin function and support the proper use of glucose in the body as well as aid in energy production.
Zinc - 14%
Zinc is an essential mineral well known to support the immune system and metabolic function. Luckily for you, it is best absorbed in animal meats where it is free from binding phytates. It also has an important role in transporting vitamin A into the blood, thus contributing to healthy skin. Your body also uses Zinc to make proteins and DNA, as well as heal wounds and develop your reproductive system.
Heme Iron - 11%
Heme Iron is the most bio-available form of iron and is extremely hard to source at significant levels, even in red muscle meats.
Proper iron intake can support overall strength, vibrancy, and immune function as well as improve fatigue and stamina. The lack of iron means we produce less hemoglobin and therefore supply less oxygen to our tissues.
* Daily Value per 3.5 oz serving and a 2000 calorie diet.

Incredibly delicious and equally ethical
After maintaining a vegan diet for the last 10 years for ethical reasons, I heard about Maui Nui and did some research. After listening to a 2.5 hour Peter Attia podcast featuring Jake Muise all about Axis deer, the dire situation in Hawaii, how humanely these animals are harvested, and how healthy the meat is, I had to give it a try. Grilled these medallions like a steak - 10/10 the best cuts of meat I have ever had, without any cognitive dissonance from an ethical standpoint. I have no doubt I will be a lifetime customer. Thanks for all you do, guys!

Fantastic
This was the first time I had ever had the leg medallions. They were delicious and easy to cook!

A splurge for our family, but a good one!
I have been eyeing Maui Nui for a while, but I wasn't ready to spend so much of our food budget on meat I wasn't sure we'd like. We managed to catch one of the very few promotions and get a good assortment of cuts and we have loved them all. This won't be the kind of thing we can do very often, but we do know that when we do we will be getting an extraordinary product. Thank you so much for making this available to so many people who otherwise wouldn't have access.

Extraordinary
From the well communicated and well packaged delivery to the extraordinary flavor, Maui Venison is not only the best venison I have ever had but some of the best red meat I have ever enjoyed. Thank you for making this available!

Best tenderloin
Fabulous! We roasted two tenderloins, one with an herb rub, one seasoned simply with salt and pepper. Both were flavorful and tender. Thank you for harvesting the axis deer!
