Seared Venison Tenderloin Power Bowl

Prepare the Vinaigrette
- Whisk together all vinaigrette ingredients in a small bowl until emulsified. Taste and adjust seasoning as needed.
Sear the Venison
- Pat the venison medallions dry. Season generously with salt, pepper, and chopped thyme. Heat the olive oil in a skillet (cast iron works best) over medium-high heat until shimmering.
- Place the medallions in a hot skillet without overcrowding. Sear for 2-3 minutes per side for a perfect medium-rare (internal temperature of 130-135 degrees Fahrenheit).
- Remove the venison from the pan and place on a cutting board. Let it rest for at least 5 minutes before slicing thinly against the grain.
Assemble the Bowls
- Divide the cooked grain and mixed greens between two bowls.
- Arrange the remaining ingredients — roasted sweet potato cubes, cherry tomatoes, and sliced avocado — artfully over the greens.
- Place the thinly sliced venison tenderloin on top of the bowl ingredients.
