USDA-Approved, Stress-Free Harvesting
Every Maui Nui harvest happens at night, when deer are calm and unaware of our presence. Using advanced FLIR technology, our team can locate, inspect, and harvest each animal quickly and humanely—without baiting, fencing, or confinement of any kind. Our method is USDA-approved and inspected in real time. A federal inspector is present for every harvest, ensuring each animal is safe for human consumption.
Since wild venison is classified as exotic meat, we voluntarily cover these inspection costs ourselves, something conventional producers don’t have to do. The result is a process that’s not only ethical and precise, but one that helps honor the animal and the environment.

Purposeful Technology
We use FLIR infrared technology to locate Axis deer at night, quietly and without disruption. This allows us to harvest with accuracy while the animals remain completely unaware of our presence. When animals experience stress before harvest, their bodies release lactic acid, which affects both flavor and food safety. By removing that stress entirely, we protect the integrity of the meat.
