The first shot of a plated meal that Jordan Cabatic ever shared with us (almost a year ago now) was this venison + pita and tzatziki combo and we are so excited to finally be able to share her recipe, mahalo Jordan! Here, in a record-hot summer, Jordan grills up venison kebabs and serves alongside a cool, refreshing cucumber tzatziki sauce. Rich, creamy, and full of fresh herbs, tzatziki is delicious on pita and, of course, grilled venison. Add this one to your list of must-try ground recipes. Serves: 3-4 Prep/Cooking time: 15/10 minutes. Enjoy!
- 1 lb of ground venison
- Pita Bread
- 1 Tomato (sliced)
- 1 Red Onion (sliced)
- Romaine Lettuce
- 1/2 Onion (finely grated)
- 3-4 cloves of Garlic (finely chopped)
- 1/2 cup Parsley (finely chopped)
- 1/2 tsp Red Pepper
- 1/2 tsp Coriander
- 1/2 tsp Sumac (optional)
- 1 tsp Salt
- 1/2 tsp Black Pepper
- Olive oil
- Garlic salt
TZATZIKI SAUCE INGREDIENTS:
- 1 cup Greek Yogurt
- 2-3 cloves of Garlic (smashed & finely minced)
- 1 medium cucumber (grated)
- 1-2 tsp fresh dill or dry seasoning
- Juice of 1 lemon
- 1 Tbsp parsley (finely chopped)
- Salt & Pepper
STEP 1: First, prep Tzatziki sauce by combining all sauce ingredients. Set in fridge and allow to chill.
STEP 2: Next, in a large bowl, combine ground venison, onion, garlic, parsley, and seasonings. Mix well and let sit for a minimumu of 1 hr to allow ingredients to settle.
STEP 3: Soak skewers for a minimum of 15 mins prior to cooking.
STEP 4: Set grill to high heat (450-500°).
STEP 5: Take a handful of meat and begin to mold it onto a skewer until about 1 inch in thickness.
STEP 6: Lay each kebab on a sheet pan and drizzle generously with olive oil on all sides.
STEP 7: When the grill is ready, place kebabs on grill and cook for about 6-7 min, turning continuously.
STEP 8: Remove from grill and lightly season with garlic salt to taste.
STEP 9: Place pita bread on grill for a few seconds to warm.
STEP 10: Build pita by placing kebab and desired toppings on pita bread, finishing off with a generous amount of Tzatziki sauce.
