The slightly smaller sibling to the Strip Loin, with a quick "butterfly" cut by our butchers, these tender steaks are faster and easier to cook.  Some salt and a quick sear in a hot pan, and it's ready in just a few minutes. For an even faster treat, dice up the filets, sprinkle with some coarse salt, maybe some whole grain mustard or horseradish (if we're being fancy), and you've got yourself tartar.
