
Venison Summer Sausage Breakfast Scramble

This is the ultimate savory breakfast. The smoky, rich flavor of the summer sausage is the perfect foundation for a hearty scramble. It’s an ideal featured recipe because it's quick to make, packed with protein, and a delicious way to start your day.

- 4-6 slices Maui Nui Venison Summer Sausage, diced
- 4 Large eggs
- 2 Tbsp Milk or cream
- 1/2 cup Bell pepper, diced
- 1/4 cup Onion, diced
- 1/4 cup Cheddar cheese, shredded
- Salt and black pepper, to taste
- 1 Tbsp Olive oil or butter
Directions
In a skillet, heat the olive oil or butter over medium-high heat. Add the diced summer sausage, bell pepper, and onion. Sauté until the vegetables are tender, about 4-5 minutes.
In a separate bowl, whisk the eggs and milk until well combined. Season with salt and pepper.
Reduce the skillet heat to medium-low. Pour the egg mixture into the skillet.
As the eggs cook, gently push them around with a spatula, scrambling until they are cooked to your desired consistency.
Just before serving, stir in the shredded cheese. Serve immediately, perhaps with a side of toast or hash browns.
