
Summer Sausage Cobb Salad

This salad transforms the classic Cobb into a rich, flavorful meal that's both elegant and satisfying. The smoky venison summer sausage is a fantastic substitute for traditional bacon or chicken, adding a deep, savory note that is beautifully balanced by the fresh vegetables and creamy dressing.

Ingredients

- 4-6 slices Maui Nui Venison Summer Sausage, diced
- 4 cups Mixed greens (romaine, butter lettuce, or spring mix)
- 2 Hard-boiled eggs, chopped
- 1/2 Avocado, diced
- 1/4 cup Crumbled blue cheese or feta
- 1/4 cup Corn kernels (fresh or frozen, thawed)
Supporting Ingredients

- 1/2 cup Mayonnaise
- 2 Tbsp Red wine vinegar
- 1 tsp Dijon mustard
- 1 Tbsp Chives or parsley, chopped
- Salt and pepper to taste
Directions
In a small bowl, whisk together all the dressing ingredients until smooth. Season with salt and pepper to taste. Set aside.
Arrange the mixed greens on two large plates.
Artfully arrange the diced venison summer sausage, chopped hard-boiled eggs, diced avocado, halved cherry tomatoes, crumbled cheese, and corn kernels in neat rows on top of the greens.
Drizzle the creamy herb dressing generously over each salad. Serve immediately.
