There are very few things that a bit of cream and some pork fat can’t help and for those of you new to eating organs, a venison terrine might be what you need. Sure, the tried and true liver and onions can work, but you’ve been good and deserve a treat! For an even simpler preparation, try a venison mousse (it’s a bit finer of a texture than a traditional pate): sage, shallots, garlic, butter, a bit of brandy and you’re done.
