In our last volume, Dr. Andy Galpin pointed to vitamin A as one of the standouts in Maui Nui. This month we follow that signal straight to the part of the animal where this wild nutrition is stored and concentrated: the organs.

If you've been around for a little while, you've heard us talk about the Nutrition of Place.
Rich volcanic soil feeds diverse plant species that feed a wild-grazing deer that feeds you. It's a natural cycle that culminates in the most nutrient-dense red meat on the planet, and it's why there has always been more in Maui Nui than any nutrition label can hold.
In our last volume, Dr. Andy Galpin pointed to Maui Nui's vitamin A levels as a standout. This month, we follow that signal straight to the part of the animal where this wild nutrition is stored and concentrated: the ORGANS.
Here's what they hold for you.
WILDLY CONCENTRATED
Every day of an animal's life, its organs store, filter, and process everything it eats, concentrating nutrients in ways muscle simply can't. The richer and more varied the diet, the more there is to concentrate.
That's where Maui's wild Axis deer are naturally ahead of the herd.

Vitamin A is a great example. It's an essential nutrient, meaning your body can't make it on its own. You can only get it from food. We found incredibly high levels of it in Maui Nui livers, so we added 5% liver (along with 5% heart) to ground venison to create our Ground Blend.
A 3.5 oz serving of Ground Blend gives you 91% of your daily value of vitamin A, where grass-fed ground beef offers close to none.*
There's more.
Our blend also gives you 3x the B12 and more than 10x the copper of grass-fed ground beef, all while only costing you about half the calories (106 vs ~200 per 3.5 oz).**
And that's just the start. Each organ adds its own story and standouts to our Organ Collection.
HEART: THE ENGINE
For everyday energy.
The heart is one of the richest food sources of CoQ10, a compound your cells use to make energy. It carries far more of it than muscle, along with B12 and heme iron, which help to carry oxygen and unlock the energy in food.
LIVER: THE STOREHOUSE
For the nutrients most diets miss.
Liver is widely considered the most nutrient-dense food on earth. One serving is a top source of vitamin A, B12, folate, copper, and choline. It banks vitamins and minerals over the animal's whole life and processes everything the deer eats first, so it carries the truest fingerprint of that wild diet.
KIDNEY: THE FILTER
For the foods that don't always agree with you.
Kidney is a natural source of DAO, an enzyme that helps your body break down histamine, a compound in foods like aged cheese, wine, and leftovers. It's also one of the richest food sources of selenium, a key antioxidant mineral.
Through the rest of the month, we'll dig in with you on each way to put organs on your table: Ground Blend for the meals you already make, Peppered 10 for the snacks you already pack, and our Organ Supplement for your daily routine.

We set out to help find a better balance for Maui's Axis deer. Along the way, we keep finding more in every part of this wild animal, especially the parts too often left behind. It's good to bring them back to the table.
There is so much more in Maui Nui. Back soon.
